Molybdenum gives this blade a super fine edge ability, these are thinner than their German counterparts and stay super sharp. The GM series is a great value and holds a fantastic edge. This stainless allow allows for a thin and stiff blade that is easy to care for.
This is a great entry level knife which holds a sharp edge. The molybdenum makes the blade hard and has a fine grain.

Saw the outlet knife at the same price as a tojiro dp and figured it had to be the better choice. And oh my god it’s such a nicer knife, I know the outlet knife can have imperfections but I couldn’t see any. I’m a 47 year old pro chef and have been able to test and hold a lot of my fellow chef’s knives I can say without a doubt this is the best feeling Japanese knife I’ve used, the shape, fit and finish are just next level. As far as the aus 10 steel goes I like it a little better then vg10 for work as it’s super easy to sharpen, but for home use I do prefer vg10’s stiff feel as I tend to cut differently anyway nuff said It’s just an all around excellent tool
