Molybdenum gives this blade a super fine edge ability, these are thinner than their German counterparts and stay super sharp. The GM series is a great value and holds a fantastic edge. This stainless allows for a thin and stiff blade that is easy to care for.

This is a great entry level knife which holds a sharp edge. The molybdenum makes the blade hard and has a fine grain.

Entry, eh? But this is so good.

This 120mm (12cm/5in) Kikuichi GM Series Molybdenum Stainless Steel Petty was considered an entry level knife, but I think much more of it. This pretty petty knife has a nice 3 rivet handle on a small knife, you would think that this would make it back-heavy, but the balance is actually good. The shiny brushed metal finish on the blade makes it look so proper and with the Kikuichi camellia logo that it sports, it makes it really pop. Using it to cut paper right out of the fancy box it came in made my day: The paper shredded perfectly and with such ease! Naturally, it cuts food even better, and I was able to separate a whole chicken without any issues. Of all the petty or paring knives out there this is the one I chose, and I think I made the right choice.
