The NWD Gyuto is absolutely my favorite knife for general use. Its big yet yet thin, surprisingly light weight and the balance is a bit tip weighted which gives excellent control, especially for a larger blade. Sharpening is easy on whetstones and it takes very, very good edge. both the blade and wood handle look basically new after 3 years of daily use (rosewood & ebony have so much natural oil in the wood that they can be washed regularly without issue). Lastly these are strikingly pretty knives, not cheap but really lovely.
Love it
