This is a compelling alternative to santokus from Kikuichi's other product lines. There's a good profile on this blade as this is just slightly taller with a more pronounced beak than the average santoku, which is nice for tracking against knuckles. VG10 core is nice. Suminagashi finish offers less friction against the blade than a tsuchime finish.
The center of gravity is a bit biased towards the blade, perhaps even more than a bit; this a competent slicer for sure.
I do wish that the spine was a bit more finished rounded for comfort in pinch grip - especially at this price point - but this is personal preference.
I want to address the other reviewer's post about this knife being fragile is misleading. I own several high end kitchen knives. VG10 is a very versatile blade steel relative to other steels used in knife manufacturing, but all nice knives require common sense to operate. Twisting, torquing and levering of the blade tip is goign to result in a broken tip.
I'm concerned this knife may be too fragile for daily use. It looks fantastic and is sharp but the blade has sustained some damage (chipping of tip / creasing of blade) after very limited and careful use. I need something more durable, especially for the price I paid (north of $260.00). I am trying how to figure out if I could get a more durable trade-in (exchange) or a refund.
This is hands down my favorite knife in the kitchen. Great weight, versatile, and very sharp!
Love it . Would love to get a 9.5 if it's ever available
